Update Terms and Conditions - Analytics

Update the terms and conditions to reflect the switch from Fathom Analytics to Google Analytics. Remove all references to Fathom and update documentation to accurately describe the current analytics implementation.

Resolved 2026-03-08: Fathom Analytics removed from both English and French Privacy Policy vault files and French WordPress page (ID 48335). See policy-changelog.md entry for 2026-03-08.
